We fill a major market void for true wood-fired, offset-smoked barbecue, delivering a unique texture and flavor profile that gas or electric competitors simply cannot replicate. By exclusively using Japanese beef, we seamlessly bridge the gap between Texas-style smoking and the refined umami palate.

PITSTOP brings the authentic, soul-satisfying spirit of Central Texas barbecue to the Chiba coast. We aren't just a restaurant; we are a multifaceted culinary venture centered on the art of high-end, wood-fired smoked meats. By utilizing a custom-imported offset smoker, we master the "low and slow" method of indirect heat—a process that takes up to 16 hours to reach perfection.

At PITSTOP, we bridge the gap between Texas grit and the refined "umami" palate of Japan. While we respect the traditional Texas "Holy Trinity"—Brisket, Beef Ribs, and House-linked Sausages—we elevate them by exclusively featuring premium Japanese beef.


By pairing time-honored smoking techniques with local Chiba provenance and seasonal vegetables, we create a cross-cultural experience where rugged smokehouse atmosphere meets the precision of world-class Japanese culinary craft.

PITSTOP is owned and operated by One Day Godo Kaisha (GK) and led by founder Ian Philip Tozer. With over 35 years of international culinary experience and F&B consulting, Ian brings a lifetime of expertise to the pit.


From our "Container Campus" in Kujukuri, we operate a sustainable, low-overhead model that allows us to invest where it matters most: in high-quality ingredients and sustainable wood sourcing like Japanese Sakura and Nara hardwood.
